
It is only 9 weeks (maybe less) until baby #3 arrives so we have officially reached crunch time! I was a little worried because I intended to start stocking my freezer with food well before now but life has just been so busy I haven’t found the time. Luckily I think I have discovered a realistic way to slowly (but significantly) fill up the freezer over the next 2 months.
This week I set the goal of adding 2 casseroles to the freezer and some snacks. I managed this by picking 2 dinners I knew would freeze well, and put them on the menu for the week. Then when I made them I simply split them into 2 dishes rather than one and froze one of them while having the other for that night’s dinner. This enabled me to make progress during the week without adding too much to my workload as I needed to make something for dinner that night anyways.
To get snacks accomplished I had my husband take the kids out of the house for a few hours Sunday morning after church and I cranked out two breakfasts/snacks and a dessert for the freezer. Breaking it up like this made it feel manageable. I plan to continue on in this approach over the coming weeks.
The meals I made this week were Spinach-Black Bean Lasagna (which my toddlers absolutely LOVED) and Chicken, Broccoli, Rice, & Cheese Casserole.


For snacks/breakfasts I made Peanut Butter & Chocolate Chip Energy Bites and Cranberry & White Chocolate Granola Bars.


I also made up Chocolate Chip Shortbread Cookies because these are some of our favorite cookies and they freeze so well.

The plan is to keep this up for the next several weeks that way by the time baby comes we will have plenty of food to save us some time (and patience) over the first few weeks of adjusting to 3 kiddos.
